Pineapple Fried Butter Production Process



Fried Jam is one of the products known by the Jambi public,  one area in Jambi which the Tangkit Baru Village of mostly found pineapple farmers in the area. In this village is even a monument along the pineapple plantation because our vision in the area are not separated from the pineapple tree, saw the situation arising initiatives so that pineapple is processed into a new food called fried jam. Pineapple farmers are happy that the pineapple was originally only sold in the current agent pineapple farmers also get requests from employers fried jam.

The first process in making jam is cooking prepare the ingredients are pineapple, flour, sugar, salt, water, butter and cooking oil.

The first step peeled pineapple then wipe clean after pineapple grated and drained for one day. Once drained pineapple is roasted and added sugar to turn into brown, still in a state of print in hot aluminum mold sized (30cm x 30cm). Once completed the next process is the manufacture of flour seasoning, the steps is to mix the flour, water, salt, butter has melted ingredients stirring constantly until completely mixed. The last process in jam making is a frying pan, which has been smeared with butter seasoning fried in hot oil until reddish color, then drain.

The second process is the process of packaging, packaging in fried jam consists of three types of plastic packaging, aluminum poil and matting, matting consists again in a few forms such as bags, starfruit, blocks and cubes, grill and then covered with plastic, it aims woven so dirty and can not long survive. Plaits are being ordered from artisans around according to demand, packaging done in such a way as to attract public attention.

Products are sold in several forms such as a grill with two and a half ounces, while the plastic and aluminum packaging poil than half a kilogram to one kilogram. Prices vary given the form of webbing around Rp. 7000 – Rp. 10 000 according to the form and level of difficulty of manufacture of woven, in other packages in one kilogram to Rp. 35 000. However, demand a lot of matting which is considered to have high artistic value. Seeing this fried jam entrepreneurs continue to improve its product quality both in taste and packaging, even the empty packaging can also remain in use.

The advantage obtained in accordance with the packaging, if in the form of matting can be achieved profit of IDR 2000/matting while in a plastic and aluminum poil gains achieved quite good/pack. From the profits can be seen that the packaging in the form of matting may cost quite a lot.

These products have been marketed in the mini and supermarkets in the Jambi province and also Jambi outside the city. This snack food has been produced for fifteen years and has the potential to become national and even international product because the product will not only highlight the taste of pineapple jam, but also from the packaging is very attractive and having high artistic value. Consumers also do not need to worry in consuming fried jam because they do not use preservatives.

The potential of this product became a huge national product because the process of production using materials easily found or discovered and its production process is also not difficult and only use materials easily found or discovered in the area jambi. Although there are a lot of demand. Pineapple Tangkit Baru village will not be discharged because pineapple is not a seasonal fruit. If the fried jam into the national product will encourage competition in creating new things from a product that not only prioritizes the flavor of a product but also in packaging. (Rizki Salmah)
